Vegetable Pulao

A simple aromatic rice dish that can be prepared in a very short time. Can use only peas and make peas pulao, which has its distinctive flavour and an ideal food that can be packed for picnic.
1.Basmati rice - 2cups (200gms)
2. Onion - 2
3. Ginger garlic paste - 2tsp
4. Vegetables - 1 cup ( carrot, peas, beans)
5. Green chilly - 2
6. Cloves, cinnamon, cardamom - 3 each
7. Ghee - 1tsp
8. Oil -1 1/2tbsp
9. Coriander leaves - 1tbsp
10. Mint - 1tbsp
11. Salt - 2tsp

1. Heat oil in a heavy bottomed pan, add ghee, add the spices, cloves cinnamon, cardamom and when it begins to pop, add sliced onions, slit green chillies and saute until the onions turn lightly brown.
2. Add ginger garlic paste and stir.
3. Add the vegetables, stir well, cover the pan and cook. (sprinkle water if only necessary )
4. When the vegetables are cooked and when there is no liquid, add salt, 4 cups of water and bring to a boil.
5. Add the rice ( washed and soaked for 20 minutes ), chopped coriander and mint leaves, mix well.
6. When it begins to boil, close with a tight lid, reduce the heat, cook for 10 minutes and turn off the heat.
Serve with vegetable kurma, brinjal curry (kathirikkai masala), or chicken curry.
